I keep participating in local weekend bazar as a bags seller and my neighbor vendor is a couple from Turkey. We exchange food in between often. I loved this little box of rice pudding which they passed me last Saturday.

So here is the recipe for that wonderful and amazing and very tasty class dessert.

Ingredients – (For 4-5 persons servings)

1- 1 Cup rice (washed and soaked for 5-6 hours)
2- 6-8 cups full fat milk
3- 1 Tin Rainbow cardamom flavor evaporated milk
4- 1 Tin Cream
5- 2 Full cups sugar (reduce or increase according to taste)
6- 1/4 Tin condensed milk
7- 6 Tbsp butter oil(desi ghee)
8- 2 Tbsp sugar
9- 1 Tbsp cinnamon powder
10- 5 cups drinking water
11- 12-15 almonds
12- 1 Tsp butter

Method

1- Take a heavy bottom cooker, heat it on high flame.

2- Lower the flame and add 2 Tbsp sugar, 1 Tbsp cinnamon powder and 6 tbsp butter oil(desi ghee).

3- Heat and mix it all very well on lowest fame.

4- Once sugar is melted well add soaked and strained rice to it and mix well.

5- Now add 5 cups of water to it and 2 cups of sugar to it, mix well. Close the cooker lid and take 1 whistle on high flame and 3-4 whistles on low flame. At the last whistle close the flame immediately.

6- After 30 minutes open the cooker lid and mash this boiled rice very well with a potato masher.

7- Take out 1 cup rice into mixi pot and mix in evaporated milk, condensed milk and cream into it and blend it all to a very fine paste. Keep aside.

8- Now mix in full fat milk to rice in the cooker and start cooking on lowest heat again. Keep stirring it well too.

9- When you see bubbling started, pour in the mixi pot content into it and mix it very well with a whisk. Or you can close the flame and use hand blender too. Be careful.

10- Heat it again for 2-3 minutes while stirring it.

11- Close the flame.

12- Now crush the almonds with a heavy rolling pin or marble mortar.

13- Mix little butter to these and spread in a microwavable plate.

14- Heat this mixture for 30 seconds on high and more 30 seconds with interval.

15- Spread and garnish this over the pudding.

16-Serve this hot or chilled as per your choice.
