Crispy sugar sticks! 



I made vegetable puffs from home made pastry sheets today. I had three pastry sheets left and vegetable mix was finished already so as a ritual of every time these sugar sticks happened!

These are very easy but little tricky to make. Just slice them into sticks or shapes, layer with powdered sugar in between, brush with sugar mixture on top and bake for some time. 

This is only favorite biscuit after coconut cookies for me. I am highly addicted actually for it. 

There are few tricks n tips to make them.

Ingredients

Puff pastry sheet (whole all purpose flour)

(low fat ones will erase the flavor)

Wax paper sheet

Baking tray (metal one)

Powdered sugar

1 egg white 

Cardamom powder, clove powder or cinnamon powder
(optional as I made plain sugared today) 

Softened butter – little

Method

1- There is no quantity mentioned.

2- It depends how many biscuits you need.

3- I suggest to start trial with one small square of puff pastries.

4- This kind of biscuits u can try with salt, cumins seeds, carom seeds mix too but I am a sugar person so I make this one only.

5- Switch on your oven at 250 degrees.

6- Take metal baking tray and line it with wax paper sheet.

7- Take the pastry sheets out of freezer.

8- Take sharp knife and cut into long strips like in picture or in desired shapes.

9- We need two pastry sheets for one biscuit.

10- Between two pcs of pastry sheet brush little powdered sugar and press together.

11- Make all biscuits like this and line them in tray.

12- Now take one sharp edge knife and give long cuts in the middle of biscuits.Flip the knofe round 2-3 times so that gap can be bigger and deeper. 

13- Mix softened butter, powdered sugar and egg white in a bowl. 

14- Brush them very lightly over the biscuits.

15- Now put this tray immediately into the fridge for 10 minutes in the lowest shelf.

16- After 10 minutes take the tray out and pop into the preheated oven and lower the temp to 160 degrees.

17- Now keep a watch and the moment u see puffing them up and lightest browning, switch off the oven and let tray remain there in for 15-20 minutes.

18- Take out and put this tray into fridge again for 30 minutes to 1 hour. 

19- You all must be thinking that why I switched on the oven such a long time back? It gives you real hot walled oven with lowered temperature. It helps in giving a wonderful rise to pastries just like a professional baking. 

Now take them out and store in airtight container.

      1- Take all purpose flour – 2 cups, mix in 1 tsp salt, 1/2 tap baking soda and softened but little hard butter 1/2 cup very well. Now with lukewarm water knead soft dough.

      2- Now roll it into square and put several small bits of hardened butter into it. Approx 1/2 cup. Fold and roll. Fold.freeze for 15 minutes.
      3- Repeat folding and rolling for 7-8 times and roll a big square and cut into squares.
      4- Ready to use.
