Vegetarian shaamis are great hit with my family. So whenever my fridge is full of frozen peas I make them once in a while.
These are quite heavy but very crispy from outside and spicy from inside indeed.
Ingredients –
6 Medium potatoes – boiled and mashed
2 Cups peas – boiled and mashed
2 Cups paneer(unsalted) – crushed and mashed
1/4 Cup grated fresh ginger
1/4 Cup mix of fresh garlic and green chillies paste
1/4 Cup dry coriander powder
1 Tbsp Black pepper powder
1 Cup Corn starch
1 Tsp baking soda
1/4 Cup lemon juice
Salt according to taste
For filling in –
1 Cup mix of green coriander,green chillies and fresh mint leaves
For frying –
6-8 cups of refind oil
4 Tbsps of desi ghee(clarified butter)
Method –
1- Mix all together except filling in material.
2- Sit in one place and start mashing the material for 8-10 minutes by hands.
3- Keep the material in fridge for 2-3 hours and again mash it for 2-3 minutes this time.
4- Now make round and little (yes little) flatten balls and keep 2-3 pinches of filling material inside and close them.
5- Heat oil and desi ghee mix in heavy bottom pan on high.
6- Lower the heat to the minimum.
7- Start frying two at a time. Fry till little dark golden brown.
6- Tastes best with Heinz tomato ketchup or green coriander chutney.
