Because my son Kutkut is studying for his 12th grade from CBSE(Indian board examination) so his study, sleeping and meal timings are upside down now a days plus school online classes also there.
All family eats at my routine and his routines is different from ours. Few days back he looked into the fridge and created something real good with only available ingredients in kitchen, it turned out so yum that he saved few spoons for me.
Today I made this pasta with his strict instructions.Lols…
Ingredients –
1- 4-6 Cups of boiled and pre washed pasta
2- 8 Cups of grated cabbage, capsicum, red onions
3- 1/4 Cup of chopped green chillies(optional)
4- 1 Tbsp of black pepper powder(optional)
5- Grated ginger 1/4 cup
6- 1/4 Cup of grated fresh garlic
7- 1 Cup thick curd
8- 1 Tbsp Basil leaves dry crushed
9- 8 Tbsp Olive oil
10- One medium sized cucumber grated with skin on it.
Method –
1- Take a big heavy bottom pan.
2- Heat olive oil in it.
3- Fry garlic until dark brown and crsipy.
4- Take out maximum flakes and mix in curd.
5- Fry black pepper powder, ginger, green chillies and onion in the garlic oil on low flame for 3-4 minutes.
6- Add cucumber and onions. Keep frying on high heat for 2-3 minutes.
7- Add rest veggies and fry very well on high flame.
8- Mix in salt. Mix well and lower the flame.
9- Now add curd and keep frying to mix in it for around 3-4 minutes.
10- Add pasta, give a good mix and cover it to simmer.
11- Open the lid and fry it on high flame for 2-3 minutes, close the lid again.
12- Close the flame and open the lid after 10-15 minutes for serving.
