Banana sponge cake!

This is a little different recipe so please I request you all to read it twice or thrice to be sure what you are going to experiment as a new kind of amazing cake.

This cake is one of the best cakes I make. 

Ingredients – 

1 Medium large ripe banana

3 Medium eggs

1 Cup Maida (all purpose flour)

1 Stick unsalted butter (approx 1/2 cup)

1/2 Cup sugar

4 Tbsp Banana essence

1 Tsp baking powder

1/2 Tsp Baking soda

1 Tbsp White vinegar

1/2 Cup milk 

Method – 

1- Seive together All purpose flour, baking soda and baking powder.

2- In a pan add milk, butter,sugar,banana essence,sliced banana.Mix well n give 

one boil n close the flame.Mix very well. Seive it strongly and remove banana threads.

3- In a bowl start whisking three eggs n vigar mixed well till pointed cones appear. I apply

a simple rule. My hand held electric whisk on full mode n count 400.It is done.

4- Mix n whisk all dry ingredients in to the seived milk n banana paste very well. No lumps should

Be there.

5- Swtich on oven at 180 degrees n grease n dust a small cake pan. 

6- Now start folding the batter into foamed eggs very lightly. We are going 

to bake this foam to get best sponge form in the cake so foam should remain intact.

7- Pour the batter into cake pan n give two light taps. 

8- Bake it at same temperature for 30-40 minutes. 

9- After it is done, take out scrap from sides n put it upside down on a wire rack. 

10- Serve with vanilla ice cream.
