Bazar ke choley bhature(no fail recipe)! 


It is really heart breaking for me lot many times whenever I see choley bhaturey pics of Indian markets on social media. 😂I really miss India because of the variety of choley bhature its local food market offers.  
You can corelate all good bollywood dialogues to choley bhature because “achey choley bhaturey banana ek art hai art”😂

After several years of trying out various recipes I have started making choley bharurey through my own no fail recipe. Initially I spent several hours over phone explaining to all my recipe. Finally I end up in taking out printouts to give and now my blog is here. Now onwards I will give blog link for the no fail recipe. 

I sincerely request you all to read my recipe two three times before giving it a try.🙏🏼
If you are short of any single ingredient please do not make it by my recipe. 🙏🏼

Choley recipe – 

Ingredients – 

1- Overnight washed n soaked in warm water choley – 4 cups 

6 big bay leaves 

1 Tbsp black cardamom powder

1/2 Tsp cloves powder

1/2 Tsp cinnamon powder

1 Tsp black pepper powder

1 Tsp Garam masala

4 Big cloves of garlic finally chopped

2 Tbsp salt

2 Tea bags of Red label brand

6-7 Cups of boiling water

Method – 

1- Put all these things in to heavy bottom pan and close the lid.

2- Take one whistle on high and 8 whistles on low flame. Close the flame.

3- After half hour open the lid and take out tea bags and bay leaves.

4- Take out 2 cup chanas (chickpeas) and mash them very well and mix back into chanas in cooker. 

2- 

1 Large red onion – peeled and chopped finely 

1/4 Cup fresh ginger peeled and grated 

1/4 Cup green chilles finely chopped

3 Big tomatoes (lightly blanched and pureed) 

1 Tbsp turmeric powder

1 Tbsp Sabut jeera (cumin seeds)

2 Tbsp anardana powder (dipped into 1/4 cup boiled hot water)

1 Tsp amchoor (mango powder)

4 Tbsp coriander powder 

2 Tbsp choley masala 

1 Tsp salt

1/2 Cup desi ghee (butter oil) 

Non stick pan

Method
1- Heat non stick pan and put desi ghee (butter oil) into it.
2- Sprinkle jeera, turmeric powder and fry little.

3- Now fry ginger in it for few seconds only and and add chopped onions till little browned.

4- Now add tomato puree into it and mix well.

5- Keep frying and strain anardana water also into it alongwith all other things.

6- Keep frying all things till this masala turns into thick batter shape. 

7- Now mix it into boiled chanas in cooker and mix very well.

8- Close the cooker lid and put the cooker on lowest flame for 5-6 minutes and close the flame.

Bhatura recipe –

4 Cups maida (all purpose flour)

2 Cups Suji (semolina – any type)

2 Cups whole wheat flour

1 Tbsp salt

1 Tbsp sugar

2 Tsp baking powder

1/2 Cup desi ghee/refind oil (but I recommend desi ghee)

Curd to knead the dough

Fresh cooking oil for frying the bhaturas

Method

1- Wash a big bowl with hot water and wipe it well. 

2- Put all ingredients and start kneading with adding curd 1 cup by 1 cup.

3- Knead well and put it into airtight bowl for 2-3 hours before making the bhaturas.

4- Now start making the bhaturas one by one.

5- Roll the dough balls and fry the bhaturas on the medium heated oil.
