1/2 Cup granulated sugar
1 Tbsp white vinegar
2 Tbsp lemon essence
8 Tbsp butter
8 Tbsp hot milk
2 Tbsp fresh green lemon rind grated
1 Cup all purpose flour
1 Tsp Baking powder
1 Tsp Vanilla sugar
1/4 Tsp baking soda
1- In a bowl put eggs, vinegar and lemon essence. Now start the hand blender on highest speed and start counting 400 in normal speed. At the the end you will see well whisked foam.
2- Mix n melt butter, milk, lemon rind.
3- Mix All purpose flour, baking powder, vanilla sugar, baking soda very well.
4- Start oven at 180 degrees with one steel bowl full of water in back side in the rack.
5- Take a big whisk and add all dry mix in one go and start folding, add milk butter mix too and keep folding not whisking.
6- Pour into well greased pan. Tap twice and slip the pan into oven and bake for 25-28 minutes.
7- Check with knife.
8- Immediately take out and scrap from the side and put upside down on wire rack for 10-15 minutes.
9- Put back in the pan.
Super soft sponge lemon cake ready.
